We have developed a series of sturgeon meats that fit all ways of cooking. Our meat comes from the same fish as our caviar. The meat can be compared to most chop fish such as monkfish, salmon and tuna. The sturgeon meat is best to be cooked either fried or on the grill. If you like to smoke fish, the sturgeon is excellent to hot smoke. As sashimi or ceviche, the sturgeon also fits perfectly, however, one should consider cutting sashimi thinly and ceviche should be in slightly smaller pieces than, for example, salmon.
