We've cut out the finest fillet of the sturgeon meat. When you cook this fine piece, do it with the skin side against the bottom of the frying-pan and have plenty of butter. Turn the meat over and cook the skinless side until the meat is cooked through. You can remove the skin before serving. The best way to cook the meat is to frying in a pan with plenty of butter or marinate with your favorite spices and BBQ over charcoal. The meat is certified Friends of The Sea.
