We cut out the finest chop on the sturgeon. When you cook this fine piece, you do it with both bones and skin. Its to get a really good taste of the meat. The bones come off more easily when the meat is cooked through. The best way to cook the meat is  in a frying-pan or marinate with your favorite spices and BBQ over charcoal. The meat is certified Friends of The Sea.
